Quick Vegetable Stir-fry

This super healthy stir-fry can be made with whatever vegetables you have in the fridge. Try sliced carrots, leeks or broccoli florets to ring the changes. The short cooking time allows the vegetables to retain all their goodness.

2tsp sesame oil
2 garlic cloves, crushed
1 chilli, finely chopped
1 onion, sliced
500g oriental mushrooms (shitake, oyster etc)
500g Chinese leaf lettuce
300g/11oz baby corn, halved lengthways
2 red peppers, sliced
60ml/4 tbsp Kikkoman Soy Sauce
Handful fresh coriander, roughly chopped

Step by step

  1. Heat the sesame oil in a wok.
  2. Add the garlic and chilli and fry for 30 seconds on a fry for 3-4 minutes.
  3. Finally add the soy sauce, and when sizzling, the coriander.
  4. Stir well and serve at once with rice or noodles.
